Think crockpot, toaster oven, microwave oven, electric griddle, and sandwich maker. Making smoothie's or other drinks in the blender is also refreshing and filling when it's hot. Use frozen fruit to replace ice too. Look in your cookbooks for ideas using those items. Think if you can do some of the same things you would do in the oven in one of these electric items. I used to us my oven to do broiled Itailian & garlic salt seasoned pork loins, but now do them on my broil setting in my toaster oven instead. Use bamboo Sckuers for chunky fruit kaboobs. I usually make a large bowl of macroni salad with small cheese pieces and shrimp, chicken, or tuna added that we eat from as our meal or as a side. Grilled meat slided on top of a green salad is also wonderful. Use tasty salad greens, onion slices and fruit such as strawberries, or mandrin oranges and then your sliced grilled meat on top. A good balsamic vinegrette taste good with this kind of salad dinner. If you have kids too think of jello and puddings. Those instant puddings you just stir. I could use some other ideas myself.
