Subject: It's too hot to cook!

Think crockpot, toaster oven, microwave oven, electric griddle, and sandwich maker. Making smoothie's or other drinks in the blender is also refreshing and filling when it's hot. Use frozen fruit to replace ice too. Look in your cookbooks for ideas using those items. Think if you can do some of the same things you would do in the oven in one of these electric items. I used to us my oven to do broiled Itailian & garlic salt seasoned pork loins, but now do them on my broil setting in my toaster oven instead. Use bamboo Sckuers for chunky fruit kaboobs. I usually make a large bowl of macroni salad with small cheese pieces and shrimp, chicken, or tuna added that we eat from as our meal or as a side. Grilled meat slided on top of a green salad is also wonderful. Use tasty salad greens, onion slices and fruit such as strawberries, or mandrin oranges and then your sliced grilled meat on top. A good balsamic vinegrette taste good with this kind of salad dinner. If you have kids too think of jello and puddings. Those instant puddings you just stir.

I could use some other ideas myself.

We eat alot of cereal at night in the summer. Not a really great suggestion, but the milk sure feels nice and cool.

Stir fry is quick...(use ur garden veggies)

baked potato in the microwave (or crock pot for like 5-6 hr depending on your crockpot) top with broccoli and cheese..

One thing I do is brown hamburger and place it in the freezer...this is perfect for casseroles..quick stroganoff...

We have cooked pizza on our grill...Just an FYI...we wanted to see if we could and how it would taste

U can always do like campfire tin foil pouches..potato, carrots, onion meat (burger or thin sliced roast work best)
u can also make desserts

usually when it is hot people want to eat less or lighter...grill fruit too...yummy

Our grill has a side burner...so don't forget u might have one too...

Buy some canned chicken (Tyson's is really good) and make chicken salad sandwiches with it. You won't even have to turn on the oven or the stove. I like to add celery and grapes to mine. It's one of my favorites. If you really want a treat you can buy some crescent rolls at the bakery to put the salad in. Yum!

I grill all summer. Lots of salads too with grilled chicken.

What is your go-to hot weather dinners? We are just heading into two months of too hot to cook weather and I am looking to escape the kitchen sometimes. I'm looking for your favorite grilling, crockpotting( is that a word), no cook or don't heat up the kitchen meals. What do you cook when it's too hot?
